Gluten-Free Recipes:
Almond Cookies |

Another recipe for American style cookies, but with almonds rather than peanut butter for those who are allergic to peanut butter.
Makes about 2 dozen cookies.
Ingredients:
| 180 gm butter or margarine |
1/2 cup sugar |
| 1 60gm egg |
2 tsp Amaretto liqueur |
| 1/2 cup almond meal |
1-1/4 cups GF plain flour (FG Roberts is fine) |
| 1 tsp Xantham gum |
1/2 tsp GF baking powder |
Method:
- Preheat oven to 180C (375F).
- Cream together the butter and sugar. Beat in the egg and Amaretto.
- Stir in the almond meal, and then the sifted together flour, xantham and
baking powder. Mix well.
- Drop teaspoons of the mixture 5cm (2in) apart on cooking trays lined with baking paper and bake for about 8 mins or until they begin to brown. Leave on the tray a few minutes before removing from the baking trays, and cool on wire racks.
