Gluten-Free Recipes: |

Makes 6 to 8 waffles.
| 1 cup rice flour (white or brown) | 1/2 cup soy flour |
| 1/2 cup potato starch | 1/2 tsp salt |
| 5 tsp baking powder | 1 tbs sugar |
| 1 egg plus 3 egg whites | 1/4 cup oil |
| 1-1/2 cups milk | 2-1/2 tsp vanilla essence |
Put the egg yolk in a bowl and beat together with the oil, milk and vanilla. Stir in the dry ingredients until blended.
Beat the 4 egg whites until soft peaks form and fold them gently into the batter. Do not over-beat.
Cook in a waffle maker or iron.
